This was a 10 minute meal. If this blog focused on quick, fun, meals for your kids - this would be it. And the beauty of something like this is you can have a little dish of cheese on the side for your non-intolerant pals to enjoy. Thoughtful. Easy. Delicious. The perfect Wednesday meal *or pot luck contribution) - especially on a day like today when I had to take off to book club right after dinner. Quick enough to create to have time to relax afterwards and it makes enough to last a few more days.....I'm extremely tired right now and really didn't mean to praise the taco, but apparently that's what I ended up doing anyway. I digress...
I altered this recipe a bit, but grabbed it from cleaneatingmag.com.
Healthy Pork Tacos (even better: when not on a budget, substitute with ground chicken or turkey)
- 1 can of kidney beans (drained, rinsed)
- 1 pkg of ground pork
- salsa
- tomato, chopped
- tortilla wraps
- lettuce, cut
- green onion, chopped
- cayenne, cumin, paprika
Ready? So easy....
Brown your pork. Once browned, throw in 1/2 tsp each of your spices, throw in about 1/4 cup of salsa and your beans. Let it all simmer for like 5 minutes.
Serve with your soft tortilla wraps and put out toppings: tomatoes, salsa, green onions, lettuce, (cheese?) - or whatever else floats your boat!

*Note: For our lunches tomorrow, I'm planning to plop some of the pork/bean mixture on a lettuce/spinach mixture, top with crumbled corn tortillas (nachos) and a bit of Caesar salad dressing and call it a TACO SALAD. Sounds like heaven for a Thursday afternoon, but we'll see....Off to put this Wednesday to bed.
I'm excited to try this especially since i just found a salsa without salt!!
