Mushroom Kale Hash


I love when we buy kale. It seems to be the never-ending vegetable purchase (which really also feels like a bad thing sometimes...)!

As I go through a few updates, you may see kale thrown in here and there. In my mind, I can throw a bit of kale, spinach or arugula in anything - it just works! And you get that dark leafy green in your meal. 

For this ...Meatless...we'll call it a Monday, (although it may have been Tuesday) I threw together a garlic-y mushroom and kale hash. I see that a lot of people online have created similar recipes, but this one in particular was inspired by the recipe on tastespotting.com. Their photos...with those poached eggs - amazing! My mouth watered as soon as I saw this.

That all being said, I didn't poach any eggs. I also didn't spend much time snapping a photo (as usual). I really do love photography and appreciate the talent that goes behind a great pic but man am I impatient when there is a dish of prepared food in front of me!

What You Need:

Potatoes: I used 3 medium-sized, peeled and diced
1/2 of onion: I had red onion
2 cloves of garlic, minced
Kale: Whatever feels right
Herbs: I used a mix of everything Italian
Mushrooms: I used about a cup of cut white button mushrooms (or whatever they are actually called!)

What To Do:

Boil some water and throw in the potatoes for 10 minutes.

After that's done, add the potatoes in a pan/skillet with some olive oil. Once they've browned a bit, add everything else. Fry away for about 10 minutes...or so. Really I can go either way with things. I tend to cook too quickly with meat-free meals because I'm too anxious to eat - and I tend to overcook meat-filled meals because I'm too paranoid. I'd say I gave it about 10 minutes, but I didn't time it.

I loved this meal. It was simple. It was better than your regular baked or mashed potato. It would be a great addition to a brunch (especially with the poached eggs...maybe I'll learn how to do that next?!).

*Note: J did have to eat a snack soon after because he wasn't filled enough with food - boys! I, on the other hand, felt this to be very satisfying. :)

    I have the same love for buying cabbage. A head of cabbage seems to last forever.
