I don't really have a recipe for this, and haven't had recipes to post in a bit because - believe it or not - I am becoming very comfortable with things in the kitchen and am beginning to just throw things together! I feel as though some things aren't necessary to have an exact recipe anyway, and this is one of them....
I had some leftover coconut milk in the fridge so I made a pasta sauce mixing regular No Name Pasta Sauce with coconut milk. I added some herbs (whatever is on hand), leeks (onion ), yu choy (spinach) and tomatoes. J added shrimp for a bit more meat, but the intention was for it to me veggie.
Surprisingly the red sauce plus coconut cream taste went extremely well together!
