I know, I know. It's Pancake Tuesday today and we ate noodles instead. Maybe we'll have our delayed Pancake Day this weekend. I wanted to keep in line with the "We Booked Our Honeymoon" theme from last night and made my very first Singapore noodles.
Let's say: Mmmmmmmmmmmmmm.....
What You Need:
Pork, thinly sliced
2/3 large red pepper, sliced
1 medium-sized zucchini, sliced
Vegetable oil
1/2 onion, chopped
2 tsp of fresh ginger (we bought frozen ginger cubes - so easy!)
1 tsp of curry powder
1 clove of garlic, finely chopped
1 cup of broth
2 tsp of cornstarch
2 1/2 tsp of fish sauce
3 sliced scallions
egg noodles
What To Do:
1. Boil water, cook your egg noodles.
2. Fry your pork until done and remove from heat.
3. Add onions, red pepper, curry, garlic and ginger. Cook for 2-3 minutes.
4. Add the zucchini and cook for another minute.
5. Add your broth mixture and stir until it slightly thickens (was expecting it to thicken a bit more than it did, but oh well....it still worked!)
6. Add in your pork, scallions and noodles. Mix until heated evenly through.
If this is a glimpse at the food to come for us in July - I'll accept this 3-week diet gladly!
