Recipe: Red Curry Spaghetti

Friday, after a long week at work, we were craving our usual thai flavours but needed a break from rice.  After searching around for a few different recipes, I took a few ideas from everything and this is what we got:  (Note:  coconut milk, curry paste, and fish sauce are staple items in our house.  I'm sure many of my recipes will have these items listed!)

Ingredients
1/2 can of coconut milk
chicken
1 tbsp of red curry paste
2 tbsp of fish sauce
1/2 of a red pepper (sliced)
2 1/2 tbsp of veg. broth  (I've been using the Organics brand)
1/2 can of bamboo shoots
Just about a 1/4 cup of cut green beans
Spice/garnish:  chili flakes, basil (a bunch of fresh) and ground pepper

How-to
While cooking your spaghetti....
1.  Brown chicken
2.  Add coconut milk and curry paste.
3.  Once paste is completely mixed in, add all vegetables, fish sauce, broth, and chili flakes (your preference).
4.  Cook for 15 minutes. Then turn everything off and add pepper and basil.
5.  Add your cooked spaghetti to bowls and pour on your curry!.

This honestly was one of our best meals in a long time (unfortunately, I forgot to take a picture)!  4 Thumbs up from the two of us :) Pin It
