Soup, Stew, or Mush?

Alright, so this recipe looks gross - well, it doesn't really look like anything BUT I promise you it's good.  Used with the right kind of rice, and I imagine it would even LOOK good! :)

We were actually craving this one again the next day so lucky for us this recipe gave us leftovers....

Recipe for Spiced Chicken & Rice Stew
In a pot, add:
- 2 tbsp of EVOO
- 1/2 of an onion, chopped
Saute for 6 or so minutes (making sure onions become translucent)

- 2 minced garlic cloves

- raw, cubed chicken (2 boneless breasts)
- 1 1/2 tsp of cumin
- 1 tsp of oregano
- 1/2 tsp of paprika
- 1/4 tsp of pepper
- 1 tsp of salt
Saute for a few minutes.

- 2 medium diced carrots (I had the miniature ones from the market!)
- 1/2 cup of sliced mushrooms (you could use whatever veg. you wanted)
Saute for a few minutes.

- 2 1/2 cups of chicken stock
- 3 tbsp of tomato paste
- 1 cup of cooked rice (or more if you want a thicker stew...I added more)

Simmer for 25 minutes and serve in a bowl with a spoon! Pin It
