I know I've talked about my love for kale, but I think my true favorite raw 'green' is arugula. I know not everyone likes it - and it certainly doesn't work with every dish, but every time I buy it, I throw it in almost everything (only raw, though!).
We got a panini press for my bridal shower way back in April, but have just now started using it. It's hard to remember that you've gotten new gadgets, as it welcomes new things to your already established routine. Any way. We've been eating a lot of paninis lately and arugula has found a happy home in every one of them, including our breakfast paninis.
This salad was inspired by a salad shown in the January/February 2012 Clean Eating Magazine. It's not at all the same, but it's inspiration came from the nut + winter green + onion + egg combination. I didn't have any of the ingredients that that recipe had called for for the dressing, so I made up a different one entirely on my own. If I try out the real thing, I'll make sure to blog about that one too!
Arugula Salad with Egg
Inspired by the Winter Greens Salad in Clean Eating.
Hard boil 1 egg per serving of salad.
In the meantime, add the following to your salad bowl (quantities really depend on what you want!):
- arugula
- chopped and sliced leek
- walnuts
- parsley (I only did this because I had it on hand)
For the dressing (this is for 2 servings), mix together:
- 1/4 cup of olive oil
- 1 tbsp of lemon juice
- 1 tbsp of maple syrup
Drizzle salad with dressing.
When the eggs are done, cut each in 3 and place on top. You're done! Easy, right? That's all I have to write for now. Today is uber-organizational-day for J and I. Mini get-our-house-in-order projects each day!
