As we can all tell, I'm all over cooking with arborio rice. It's so much fun and takes forever to get through a box! NOTE: Do not be impatient with this rice. This recipe was really good - and quick - but I cooked it a bit too quickly. Being hungry while waiting for arborio rice isn't always the best idea...
Ingredients
2 cups of vegetable broth
3/4 cup of arborio rice
2 garlic cloves
1/2 tbsp of margarine
1/2 tbsp of EVOO
shrimp
1/2 cup of broccoli
1/4 cup of frozen peas
salt, pepper
1/2 tsp of dried thyme
1. In a pan, add margarine, oil and garlic.
2. Add rice, salt, pepper, and thyme. Stir around to coat rice in spices.
3. Add 1/2 cup of broth and simmer.
4. Add raw, chopped (small) shrimp, broccoli and peas. Stir and add another 1/2 cup of broth.
5. After a few minutes, add the rest of the liquid and let simmer until liquid is absorbed, stirring constantly.
Will definitely try it again. I'm seeing a very common theme in all of our meals lately though - not that I'm complaining - but rice, broth, garlic, some type of veg, some type of meat, DONE. :)
