A colleague of mine passed this very easy recipe along to me.
Ingredients
1 1/2 cups of water
1 Big Onion (chopped)
1 Tomato (chopped)
2 cloves of garlic (minced or grated)
3 tbsp of vinegar
1/2 tsp of sugar
Spices: 1/2 inch of cinnamon stick, 3 whole black peppers, 2 cloves
pork (or chicken)
How-To:
1. Heat oil and spices in pan. Add garlic and fry.
2. Once garlic is browning, add onion and fry for awhile (onion should begin to look translucent). Once this happened, I removed the mixture from the pan (temporarily) and placed it in a small bowl.
3. Fry tomato on low heat until it becomes a paste. Add vinegar. Once this is done, I removed it from the pan and added it into the bowl with the onions.
4. Add meat and sear on high heat for 2 minutes.
5. Add all ingredients back in pan with meat, add water and sugar (salt if you'd like).
6. Boil until meat is cooked.
Serve over rice.
I used chicken instead of pork (take advantage of what your kitchen already has!) and will now be adding this to my mental recipe box. It was a yummy, tangy surprise!
