Recipe: Balsamic Chicken

I meant to write this from last week..

A few things I love about weekday meals:
1.  I love when you get a super cheap deal on a HUGE piece of meat (i.e. a WHOLE chicken or a pork loin)
2.  I love when you get everything in order and actually throw something in the slow cooker so you can not only come home to a great smelling home, but you can come home to a meal that's already done.

**Note:Our slow cooker was a cheap $20 appliance from Zellers and our rice cooker was $10 from the Super Store.  I highly recommend that everyone has these two things.  It doesn't have to be expensive to do the trick, but boy does it make things easier!

Jon followed a recipe I found, added a few of his own things and we got 4 meals from this:

Ingredients
(Amounts should just depend on what you think for the size chicken you have)
1/2 cup Balsamic Vinegar
1/4 cup Olive Oil
Can of diced tomatoes
Can of tomato sauce
2 cloves of garlic
2 tsp of oregano
2 Bay leaves, a bit of fresh thyme

Throw it all in your crock pot and cook for 6 - 8 hours.  We had this with rice - the chicken had enough flavour and juice that you didn't need anything else. Pin It
